Free from - Wheat, gluten, milk, egg, soya, nut
NB for a gluten free diet check the Food Directory from Coeliac UK to see which brands of cornflakes are suitable (www.coeliacuk.org.uk)
There are several brands of "free from" breadcrumbs, Hale and Hearty, Orgran and Crimbles, but crushed cornflakes or rice crop cereal works just as well.

Ingredients
- Chicken breasts
- Cornflakes or "free from" breadcrumbs
- Oil
(45g/1½ oz) corn flakes will coat a 170g/6oz piece of chicken)

Fantastic website! There is noone with allergies in my family but as an eczema sufferer I have had to avoid wheat at times. I have two children with eczema so I try not to give them too much wheat. So this site is great for different cooking ideas.
ReplyDeleteI don´t know whether you can buy wheat free couscous but it does make a nice and crunchy coating for chicken nuggets!
They look great and very easy to make. It is great you have found a way to make them without all of the usual ingredients! Do they stay moist? I always make mine by dipping in natural yoghurt before the breadcrumbs which keeps the chicken very moist.

ReplyDeleteWe have made our own nuggets before because we wanted to avoid all the nasties in the shop bought ones. Using rice crispies is a great tip, I would never have thought of that!
ReplyDeleteGreat healthier version of chicken nuggets! Although I'm not allergic I have some skin problems from time to time, still don't know what cause it but it may be as well diet!
ReplyDeleteI used to use Mrs Crimbles all the time when I went gluten free. I was told it would help my MS but I made so much gluten free bread I ended up putting on wieght. These look super scrummy. I love that coeliacs have so much more variety than they once did, especially with super mums coming up with new recipes all the time :-)
