Oven Baked Rissotto

Free from Dairy (IF THE CHEESE IS EXCLUDED) , Soya, Wheat, Gluten, Egg and Corn.

You need:


250g smoked bacon chopped into small pieces
1 onion chopped
1oz Pure Sunflower or similar
10 oz Arborio rice
½ glass white wine
150g cherry tomatoes (I often replace this with 300g mushrooms)
700ml chicken stock (I make up 2 know stock cubes in 700ml of hot water)
2 oz grated parmesan (leave out if dairy free)

Instructions


Heat oven to 180 degrees
Fry bacon pieces in casserole dish (dry fry) for 3-5 minutes until golden and crisp. Dish need to be able to go on hob.
Stir in onion and butter and cook for 3-4 mins until soft
Pour in rice and mix well until all rice is coated in juice from onions
Pour in wine and cook until all liquid absorbed
Add cherry tomatoes, hot stock and give quick stir
Cover with lid, put in oven and cook for 18 mins stirring occasionally (I did it twice).
Stir in parmesan and stir until melted
Serve and sprinkle with extra parmesan

MEWS free Chocolate Fairy Cakes

An adaptation of the Hale and Hearty chocolate brownie mix (available from most Holland and Barratt stores) to make gorgeous MEWS free chocolate fairy cakes!



Add 4 eggs worth of egg replacer,
200g dairy free marg,such as "Pure" sunflower
2tsp baking powder and
50g gluten free flour.

Whizz it all up with enough water to make a normal cake consistency and bake as fairy cakes. They aren't crumbly but moist and have chocolate bits in.

These freeze really well too - just microwave on high 15 secs to eat. One box makes about 24 cakes so it lasts almost a month. They do taste like normal chocolate cakes.

This list was compiled by a friend of mine for her son who suffers multiple food allergies. It could save you a lot of hard work but do read the notes first.

Notes:

1) Manufacturers change the ingredients in foods without warning – so you do need to check products each time you buy them. 2) Some of the products mentioned below contain Soya Lecithin, which we were told was ok on a Soya Free diet because it is a highly purified oil, and contains none of the protein to which most people react.

3) Some products may state "may contain traces of...." You will need to check this and make a call dependant on the level of your childs sensitivity.
