Facebook Group Recipe Round-up




The members of our Facebook group are soon going to put me out of a job.... we've had some inspirational cooking with very few ingredients showcased on there this week.


Here a just a few of them!





Chicken Pop Corn Kebabs

  • Cooked chicken breast, cooked mashed sweet potato, dash of oil and a little water if needed. 
  • Bind all ingredients together in a bowl with maize meal (polenta). 
  • Season if allowed and then divide into balls and pop on a baking tray, keep checking and turning. (Not an exact science as to when done. Just check and check.)
  • Once crispy and firm take out. I bought cake pop sticks and put 3 on each (like a kebab). 
  • Eat hot and cold.



Gingerbread Reindeer

Using a slightly different recipe to mine - (from the Glutafin site) one member made her own gingerbread reindeer. It's really simple, you can read more here.


I love the glass cherries for the red noses!

Lollies - Coming Soon!!!

Last but not least, I take my hat off to the person who made lollies on sticks from sugar alone, and wrapped them to look like store bought lollies! A real treat. For children who can only eat homemade food, sometimes making something look less homemade is a treat. My Mum used to make most off my clothes when I was younger, and clothes with labels in generated a great deal of excitement!

Spring Chicken Casserole

I made this for lunch today, and unbelievably EVERYONE enjoyed it! Since I have two of the fussiest eaters around and three on exclusion diets making a "one size fits all" dish is little short of miraculous.... so I thought I would share!



Quite honestly, I wasn't sure what to call it! It's kind of like a casserole.... except it isn't! A bake? But without a creamy sauce..... whatever you want to call it, it worked for us.

Feeds 4 adults (or 6 with smaller appetites)
Serve with rice

Free from dairy, soya, corn, (depending on your choice of stock), wheat, gluten (same) and egg.

Ingredients
  • Pack of chicken breasts - each cut lengthways into half/
  • 1 red pepper
  • 1 large leek
  • 1 large courgette
  • 500ml vegetable/chicken stock or whatever your family uses
  • seasoning (salt and pepper)
  • optional - before the stock goes in, add some garlic and mix it well
  • 4 rashers of bacon - diced
  • Free From crumbs

Method
  • Cut the pepper into long thin strips and lay over the base (stops the chicken burning on the base)
  • Arrange the chicken on top of the pepper
  • Dice the leek and courgette finely (I was playing with my new Magimix Food Processor!) and spread evenly over the chicken
  • Pour on the stock (make sure it is cooled if like me you are putting this on a delayed start) until everything is almost covered (picture 2)
  • Sprinkle over the chopped bacon, 
  • Followed by the breadcrumbs 


Bake for 50 minutes at 180C, until the top is golden.

'Laumuchun' or Turkish pizza

This is from Cheryl on our Facebook group who says
"My kids love this recipe, adapted from a Turkish recipe called 'Laumuchun' or Turkish pizza (it's great as they don't use cheese). Great with humus on the side. "
Ingredients:-
  • Pack of gluten free pita (these don't contain egg) 
  • 400g grams mince meat or lamb (or mixture of both, also works with chicken) 
  • 1/2 tin of tomatoes Fresh Parley 
  • 1/2 lemon juice grate mushrooms, or corgettes, or peppers (what ever you like really) 
  • Seasoning 

Method:-
  • Put the pitta in the toaster until they open a bit, then cut in half. 
  • Put all the mixture in a bowl, mix well. 
  • Smother the mixture over the pita and squeeze it down with the fork. 
  • Then pop under a grill until cooked.

Pollo alla Cacciatoria

Another savoury recipe from Michelle at Fabed.
Some of the ingredients might not suit you but many of them you can adapt.

Ingredients:-
  • 1 x 15ml tbs spoon of oil which is safe(I use garlic oil) 
  • 75g pancetta cubes 
  • 6 spring onions finely sliced 
  • 1 tsp rosemary finely chopped (if tolerated if not use a herb which is) 
  • 500g turkey or chicken fillets( i use turkey but have made it with Chicken also) 
  • 1/2 tsp celery salt 
  • 125ml white wine( I replace it with homemade stock) 
  • 1 x 400g chopped tomatoes 
  • 2 bay leaves 
  • 1/2 tsp sugar 
  • 1x 400g can cannellini beans ( I use chickpeas as we can all tolerate them) optional 

Method:-
  • Heat the oil in a heavy based pan and fry the pancetta cubes, sliced spring onions and chopped rosemary for a couple of minutes. 
  • Add the poultry (which ever you are using) and sprinkle celery salt 
  • Pour in wine/stock and let it bubble before adding the tomatoes, bay leaves and sugar. 
  • Put the lid on and let the pan simmer for 20 mins. 
  • Drain the beans/peas if using and add to the pan. 
  • When warmed through serve. 

Serves 4
