MEWS free Chocolate Fairy Cakes

An adaptation of the Hale and Hearty chocolate brownie mix (available from most Holland and Barratt stores) to make gorgeous MEWS free chocolate fairy cakes!

Add 4 eggs worth of egg replacer,
200g dairy free marg,such as "Pure" sunflower
2tsp baking powder and
50g gluten free flour.

Whizz it all up with enough water to make a normal cake consistency and bake as fairy cakes. They aren't crumbly but moist and have chocolate bits in.

These freeze really well too - just microwave on high 15 secs to eat. One box makes about 24 cakes so it lasts almost a month. They do taste like normal chocolate cakes.
